Tonight I was craving a clean, healthy and hearty meal. I knew I wanted to do some salmon, and the idea of incorporating something lemon and green came to mind. My husband, T, love beans so I imagined up this warm salad to top the salmon and some brown rice with. It came out so FRESH but hearty at the same time. Really really yummy, and super simple.
This recipe will give you two large servings.
- 1lb salmon filet – cut into two pieces
- 2 cups of cooked brown rice (or your favorite grain)
- 1 cup arugula
- ½ cup of small white beans, drained and rinsed
- Juice of ½ a lemon
- 3 tbsp finely diced red onion
- Olive oil
- Salt & pepper to taste
- Red pepper flakes
Get your rice (or whatever grain you’ve chosen) cooking away.
Heat 2 tbsp olive oil in a large pan over medium-high heat until hot. Rub salmon filets with salt and pepper, including the skin and sides. Once the oil is hot, place the salmon, skin-side down, it should sizzle! Let the salmon cook on that side for about 5 minutes.
While the salmon is cooking, heat 1 tbsp olive oil in a smaller pan over medium-low heat, add the red onion and sauté until soft and translucent. Add the beans and the lemon juice, some salt and pepper, and combine until heated up.
Flip the salmon and turn the heat down to medium heat and cook for another 5-10 minutes, depending on the thickness of the salmon and how well-done you like it.
Add the arugula to the bean mixture and wilt, about 3-5 minutes. Remove from heat. When the salmon is cooked, remove from heat. Add some of your grains to the plate, place the salmon on top and spoon the salad over the rice and salmon. Sprinkle some red pepper flakes on top, and enjoy!!!
